How to prepare beef ofam

One plantain contains a considerable amount of fiber which helps to decrease your chances of suffering from heart disease, diabetes and certain cancers, such as colon cancer.

Ingredients

Ripe plantain (over ripened)

Onions

Scotch bonnet pepper

Fresh ginger

Cloves

Self Raising Flour

Salt

Oregano

Minced beef

Palm Oil

Heat palm oil in a pan over medium heat and add minced beef.

Stir continuously and stir in chopped onions,  garlic, oregano and beef seasoning.

Allow simmering for 2- 4 minutes.

Set the oven to 200C and grease a loaf pan with palm oil.

Peel and cut up the onion and ginger and transfer to blender

Add the scotch bonnet, cloves , salt and blend the mixture until smooth.

Peel the plantains and cut up into pieces and mash with potato masher.

Transfer to a bowl, add flour, onion mixture, palm oil and mix well.

Toss over the stir fry minced beef and continue stirring.

Pour into the prepared loaf tin and place it in the oven to bake.

When it is thoroughly baked, a skewer inserted into the cake will come out clean.

Remove from the oven and let it cool down before removing from the loaf tin.

Serve the ofam with boiled eggs and nuts. It can be eaten as dessert, main meal, side dish or a snack.
