How to prepare Ghanaian beef mince stir-fry

Vegetable oil

Beef mince

Ginger

Heat oil in a wok or large frying pan. Add beef mince and stir-fry over high heat for 5 minutes to brown. Remove to one side.

Add ginger (grated), garlic (chopped) and onion to the pan, then stir-fry for 2 minutes to lightly brown onion.

Add vegetables, sweet chilli and soy sauce, then stir-fry for 5 minutes until hot, adding a little water if necessary to cook the vegetables.

Return mince to the pan, toss and stir-fry for 2 minutes more. Serve in bowls scattered with peanuts (coarsley chopped) and coriander.
