For those of you who want to try Bawumia’s favourite, here’s a quick recipe for cocoyam and garden egg stew. We added a touch of koobi (salted tilapia) and avocado.
Cocoyam
- Slice your cocoyam and cut it.
- Wash and put into a cooking pot.
- Add salt and water.
- Boil until it is soft but still solid.

Garden Egg Stew
- Wash and cut the garden eggs
- Cook the garden eggs and pepper for about 10 to 15 minutes and set aside.
- Blend the garden eggs and pepper and set aside.
- Cut your onions and tomatoes and set aside.
- Pour the palm oil into a cooking pot and allow to warm up.
- Put your cut salted tilapia and chopped onion in the oil.
- Add your chopped tomatoes and let it simmer for up to 10 minutes.
- Put in your blended groundnut and pepper and stir.
- Add salt to taste and a little water.
- Make it simmer for up to 8 minutes with stirring at intervals.
- Serve boiled cocoyam and garden stew.
- Garnish with avocado.
