Method
Meat
- Cut the meat into desirable sizes and wash into a saucepan.
- Add the blended onion, garlic and ginger.
- Add salt, seasoning and small water and allow to steam for 4 - 8 minutes.
- Heat oil in a large saucepan. Allow meat to cool and fry until golden brown and transfer to separate bowl.
Sausages
- Wash sausages and chop into small sizes.
- Marinade sausages in blended spices ( onion, garlic and chili) for 4 minutes and fry until golden brown.
Shrimps
- Use paper towels to pat the shrimp dry.
- Toss the shrimp with salt, black pepper and garlic powder.
- Pour some quantity of flour in a bowl. Beat eggs in another bowl and bread crumbs in another.
- Dip each shrimp in flour, eggs and then bread crumbs. Use your fingers to press the bread crumbs onto each piece of shrimp.
- Heat oil under medium heat and deep fry shrimps in batches until golden brown.
- Transfer them to a paper towel lined plate.
Rice
- Add chopped onion and garlic, leave to simmer
- Add blended pepper, fresh tomatoes and tomatoes puree. Stir and cover to cook.
- Taste for salt
- Add curry, nutmeg and rosemary.
- Add cups of rice to the stir continuously for 2 minutes.
- Add water, taste for salt again and cover to cook.
- After 5 -10 minutes add the fried meat, sausages, green pepper, shrimps, carrots and allow to simmer.
