Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk, coconut milk is lactose free so can be used as a milk substitute by those with lactose intolerance.
Ingredients
1 1/2 cups milk
4 cups white sugar
4 cups flaked coconut
1 dash vanilla extract

Method
In a medium saucepan over medium heat, stir together milk and sugar until smooth.
Heat, without stirring, to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
Remove from heat and stir in coconut and vanilla. Let cool slightly.
