For those of you who want to try Bawumia’s favourite, here’s a quick recipe for cocoyam and garden egg stew. We added a touch of koobi (salted tilapia) and avocado.

Cocoyam

  1. Slice your cocoyam and cut it.
  2. Wash and put into a cooking pot.
  3. Add salt and water.
  4. Boil until it is soft but still solid.

Garden Egg Stew

  1. Wash and cut the garden eggs
  2. Cook the garden eggs and pepper for about 10 to 15 minutes and set aside.
  3. Blend the garden eggs and pepper and set aside.
  4. Cut your onions and tomatoes and set aside.
  5. Pour the palm oil into a cooking pot and allow to warm up.
  6. Put your cut salted tilapia and chopped onion in the oil.
  7. Add your chopped tomatoes and let it simmer for up to 10 minutes.
  8. Put in your blended groundnut and pepper and stir.
  9. Add salt to taste and a little water.
  10. Make it simmer for up to 8 minutes with stirring at intervals.
  11. Serve boiled cocoyam and garden stew.
  12. Garnish with avocado.
