Red lentils are high in protein, quick to cook and very versatile. Popular in India, you can also buy them at supermarkets in Ghana, or even Asian/Indian stores.
To make a delicious red lentil curry, all you need is:
Three tablespoons of oil (try coconut if you have it)
Two tablespoons chopped fresh ginger
Two cloves garlic, chopped
An onion, finely chopped
One tablespoon curry powder
Four medium carrots, chopped
Two potatoes, peeled and cut into 1-inch pieces
Four tomatoes, diced.
One cup red lentils
A cube of stock, vegetable is best. Dissolve it into two cups of water
Two cups of fresh coconut water
Rice for serving it on
How to make it:
Heat the oil in a large saucepan over medium-high heat. Add the ginger, garlic, and onion and cook, stirring frequently, until the onions are clear.
Stir in the curry powder.
Add the carrots, potato, tomatoes, lentils, broth, and coconut water.
Bring to a boil, reduce heat, and simmer, stirring occasionally, until the lentils and vegetables are tender, 15 to 20 minutes.
Serve of a bed of rice, either white or brown.
