Fruit tower

Health nuts might be more interested in going for a fruit tower instead of a calorie-laden cake.

You could still use a tier, but use Ghana's abundance of tropical fruits instead. You could even get creative and cut the fruits – like pineapple – into special designs.

Cupcakes

Who doesn't love a delicious cupcake? Your own, frosted, little treat.

Cupcake towers for wedding cakes have been an international trend the past few years, and they can offer variety that a traditional cake can't, you can do a range of styles and flavours to suit all your guests.

Doughnuts

You could use the traditional American style doughnuts, or go for the local bofrot. To add a twist, why not fill the insides of the bofrot with chocolate or fruits?

Tower them up carefully into a triangle, or, use a tier system again.

Chocolates

In a hot climate, chocolates for your wedding cake will need to definitely be kept in a cool, air-conditioned room, but if you can manage that, then chocolate truffles are a nice alternative to a heavy cake.

You can also have a variety of colours and flavours, even some alcoholic ones if you wish. Present them in a tiered form for the wow factor.

Mini tarts or pies

Maybe you really want to rally against convention for your wedding day, or have an aversion to sweet stuff.

In that case, you could swap the cake for small quiches, tarts or pies. A savory wedding cake of sorts, you can also tower them up to resemble a cake, but really, your guests are getting their own little savory bite instead. Alternatively, stick with sugar, and make them sweet, fruit filled pies or cream based tarts.

Either way, stacking them high will be the key to making them the centre piece of the table.
