Kotoko confirmed the appointment of 56-year-old Polack on Wednesday, weeks after parting ways with Croat Zdravko Logarusic.
Frimpong Manso, a club legend who played as a defender in the 1990s, acted as a stop-gap coach following Logarusic's departure.
Polack, a former coach of Berekum Chelsea and King Faisal, will officially start work on Monday May 15.
On Thursday, however, he visited the club's training facility at Adako Jachie to familiarize with players.
Asante Kotoko, winless in their last seven Premier League games, host Tema Youth on Sunday.

"Go out there and do your best," Polack told the players on Thursday morning at training, according to Asantekotokosc.com. He was introduced to the squad by the club's Operations Manager, Ernest Owusu Ansah.
"I will be with you on Monday. But like I said, be ready for more hard work.
"Let's just focus on the game on Sunday. My days will start next Monday. You will get to know me. Put your mind on the game, and for those players who are going to be in the squad, believe in yourselves when playing with your teammates."

Meanwhile, Polack has wasted no time in getting to work on squad decisions. After watching the Kotoko youth team's 2-0 loss to the senior team in a trial match at Adako Jachie, he promoted lanky striker Eric Osei Tutu.
"He told me to report on Monday to train with the senior team," Tutu excitedly confirmed in an interview with asantekotokosc.com.
