Extra spicy Jamaican Jerk Chicken

The Jamaican Jerk chicken recipe is perfect for the summer! It is really easy and can be added to the menu at any BBQ summer party. The first time I ever had Jamaican Jerk chicken was at a summer food fair where there were a bunch of food vendors. I ended up at the Jamaican food stand and the Jamaican lady selling the food advised that I try the chicken; of course I never turn down chicken, so I did. Let’s just say I have been hooked ever since. It was so juicy, spicy and tender. So I started looking up different recipes on how to make it to my taste. This recipe is what I have come up with over the years.  It’s very flavorful, so I’m sure you will enjoy it!Few Tips:

  • Using your knife, you can gently slice each drum stick. I usually do this to open it up a bit.
  • You can marinate the day before; simply put the chicken in a ziplock bag, pour all your spices in it, shake until the chicken is entirely covered and leave in the fridge over night
  • If you do not like spice don’t add the Habanero pepper

Ingredients

  • 6 chicken legs
  • 1 lime
  • 1 onion, chopped
  • 2 tablespoons ground all spice
  • 2 tablespoons jerk chicken spice
  • 2 Knorr cubes
  • 1 tablespoons of olive oil
  • 2 habanero peppers (for extra spice)
  • 1 tablespoon of ground ginger
  • 1 tablespoon of brown sugar (optional)
  • 1 tablespoon of ground nutmeg
  • 1 tablespoon of dried thyme
