  1. Mackerel fish

  2. Scotch bonnet

  3. Tomato puree

  4. Onions

  5. Garlic

  6. Ginger

  7. Cloves

  8. Spices

  9. Vegetable oil

  10. Salt

Method

  1. Remove fins, cut into desirable sizes and wash fish twice.

  2. Season with salt, cube and blended garlic, ginger, onion and cloves.

  3. Marinate for 10 -15 minutes.

  4. Heat enough oil in a wok and fry fish.

  5. Transfer to a stainer.

  6. Fry onions for 3- 6 minutes.

  7. Add blended pepper, garlic and ginger and cook for 5 minutes.

  8. Add tomato puree, water and stir occasionally.

  9. After 10 minutes, add spices and check for salt.

  10. Add fried mackerel and allow to simmer for 3- 5 minutes.

  11. Serve with rice, yam or banku.
