Method

  1. Peel sweet potatoes and wash thoroughly.

  2. Heat oil and add sweet potatoes, and fry until golden brown and fork tender, turning occasionally.

  3. Crack eggs in a bowl.

  4. Add chopped tomatoes, onions, green pepper, carrots, salt and whisk.

  5. Heat a non-stick skillet to medium-high heat and spray with some oil.

  6. Pour egg mixture and turn over when the sides begins to brown.

Chili sauce

  • Place the onions in a heavy-based pan or pot. Fry gently in the oil until soft.

  • Add the bell pepper, garlic and ginger. Cook for another 2 minutes.

  • Add the chilies.

  • For a hot sauce, leave the seeds intact.

  • For a milder sauce, remove some or all of the seeds.

  • Simmer for about 5 minutes. Stir occasionally.

  • Remove and allow to cool.

  • Pour back into the pot or pan. Simmer for 15 minutes on a gentle heat.
